What happens when a beet, several stalks of celery, an apple, a dash of lime juice and a pinch of fresh ginger whirl together in a blender for several minutes? Juice magic happens. And this is what occurs every day at Cosmic Veggies, a vegan restaurant in Anacortes. From their kitchen to your cup, they serve healthy, organic juices, smoothies, salads and sandwich wraps. Everything on the menu is vegan as well as gluten free. “We never compromise on nutrition, “says Elizabeth Weaver, owner of Cosmic Veggies.
Vegan Restaurant in Anacortes Began at Farmers Market
Their mission is simple, “to make delicious, plant-based gluten-free food and make it accessible to everyone.”
For Weaver, this passion for food and feeding others came from her own life. Becoming vegetarian when she was younger, she sought out food recipes that not only tasted good but made her feel good too. Her experimentation mixed with creativity led her to lean into veganism as a way of eating, giving her the health and vitality she craved. Then she desired to share her knowledge through the means of healthy delicious juices and smoothies.
Beginning in 2015 with a solitary booth at the Anacortes Farmers Market, her juices quickly became a hit, selling 226 drinks in 5 hours. She and her vitamin-rich, immune-boosting beverages became regulars at the market, slowly building a supportive customer base and following.
Healthy To-Go Food in Anacortes
In January 2019, an offer presented itself for her to grow her business. She took the leap of faith and moved from a 10-foot by 10-foot tent at the market to a brick-and-mortar store located in the front of Trinity Skate, right on Commercial Avenue. With this approximately 200-square-foot space she served fresh juices and smoothies, but as time went on Weaver began to introduce healthy food items as well. “We grew organically adding in one food item at a time,” she says. “Our focus has always been to give our customers healthy quick options for on-the-go.”
And “on-the-go” materialized into how Cosmic Veggies pivoted during the pandemic. With to-go orders and delivery options available, Weaver discovered people craved healthy food alternatives for at-home meal planning as well as enhancing their overall health and immunity.
As a result, weaver developed her 5-Day Detox Meal Plan, which includes daily breakfast smoothies, raw juice and protein snack, five dinners, and additional snack items to munch on in between. Today, this remains one of her best sellers and a bargain to boot!
Other best sellers include the Super Blue Magic Smoothie made with blue algae obtained locally and well, it’s blue! The immunity boost and hydrate juices are very popular as well as refreshing and pair nicely with a homemade veggie burger or falafel wrap.
“I enjoy making comfort vegan food,” says Weaver. “Foods with textures and tastes you miss going gluten free or vegan.” Adding in one product at a time has resulted in an extensive menu for Cosmic veggies, enough to keep customers coming back for more.
And for that Weaver expresses her gratitude. “I am incredibly grateful for the tremendous community support,” she says. “I love inspiring positive change in someone’s life. It makes me excited to come to work every day.”
Vegan Restaurant in Anacortes Expands
On July 3, 2022, Weaver leaped again, expanding Cosmic Veggies into its new location at 615 Commercial Avenue in downtown Anacortes. A bright, open and airy space with plenty of cozy corners as indoor seating. Dine in or grab a sandwich to go. There is even some stylish merchandise if you wish to wear your support.

A best-selling drink from Cosmic Veggies you can make at home is their Chocolate Monkey. Weaver shares her recipe:
- 1 small frozen banana (chopped into slices and then frozen on a baking sheet)
- ½ cup of ice
- 1 serving of chocolate, vanilla, or any flavored Plant-protein
- 2 tablespoons of any nut butter
- ¾ cup water or any plant milk
Blend together in a blender or food processor.
Optional: 2-3 dates or ½ cup of frozen berries, or a handful of greens like baby spinach or kale, without stems.
